UNOX combi ovens are workhorses of the commercial kitchen, but like all high-performance equipment, they require consistent maintenance to operate safely and efficiently. This guide walks through the essential maintenance tasks your team should be performing daily, weekly, and periodically.

Daily Maintenance

At the end of each service, complete the following:

  • Run the automatic cleaning cycle: UNOX ovens feature built-in WASH.PLUS or ROTOR.KLEAN systems. Select the appropriate cleaning program based on the level of soiling (light, medium, or heavy) and load the recommended detergent and rinse aid cartridges.
  • Wipe down the door gasket: Use a damp cloth to remove food debris from the door seal. Inspect for cracks or deformation.
  • Clean the drain: Check and clear the drain at the base of the oven cavity to prevent blockages.
  • Check the water inlet filter: Ensure it is free of sediment build-up.

Weekly Maintenance

  • Inspect the door hinges and latch: Ensure the door closes flush and the latch engages firmly. A poor seal affects cooking performance and energy efficiency.
  • Check the steam generator: Look for limescale build-up around the steam injection points. Descaling frequency will depend on your local water hardness.
  • Clean the exterior panels: Use a stainless steel-safe cleaner and wipe in the direction of the grain to avoid scratching.
  • Review error logs: Access the UNOX control panel diagnostics to check for any logged faults or warnings.

Periodic Maintenance (Every 3–6 Months)

  • Descale the boiler and steam circuit: Use UNOX-approved descaling solution. Follow the descaling program on the control panel. Frequency depends on water hardness — harder water requires more frequent descaling.
  • Inspect heating elements: Check for visible damage or uneven heating. Any irregularities should be assessed by a qualified technician.
  • Calibrate temperature probes: Verify the core temperature probe is reading accurately using a calibrated reference thermometer.
  • Check ventilation and fan operation: Ensure the convection fan is running smoothly without unusual noise or vibration.
  • Service by a qualified technician: UNOX recommends a professional service inspection at least annually, or more frequently in high-volume operations.
